Coffee Pods — Why and How?

Three years ago we embarked on a journey to bring our two nostalgic drinks to a coffee pod; the Brown Sugar Banana and the Sweet Potato C.R.E.A.M. When we opened The Get Down, the goal was to bring specialty coffee to North Minneapolis and all the folks that live here, and we know that not everyone can get to a cafe everyday. This meant we needed to create a product that could bring these brings to people’s homes, instead of expecting them to come to us.
We chose the Brown Sugar Banana Latte and the Sweet Potato C.R.E.A.M not only because they are two of our most popular specialty drinks, but because they remind us of the history and story behind The Get Down. The inspiration behind these drinks was Houston’s grandmother’s gathering table, where you were sure to find some banana pudding and sweet potato pie. These two things are a piece of Houston’s culture and history, as well as Black culture and history, making them very important flavors to us.
How did it take us three years? They were terrible at first. As we’ve developed the coffee pods, we’ve said to ourselves many times “I wish we could’ve captured the process of just how much they changed”. The first coffee pods we tasted resembled dark roast coffee and over citrusy flavors from the banana and sweet potato additions; together it was not good. After finding a way to capture more of a light profile from the coffee and balance the sweetness and other flavors in the pods, we slowly got what we were looking for.
We had the privilege of working with some great folks that developed the flavors for us and took care of all the science that went into making sure certain flavors came through in each cup that was made with the coffee pods.

For brewing at home, there’s a lot you can do with the pods; these are the recipes we’re currently using that only take a few ingredients to get a wonderful final product.
